Method
Heat the olive oil in a large, wide pan over a medium heat. Season the chicken and cook for five to seven minutes, turning until lightly browned.
Add the chorizo and cook for another two minutes. Stir in the onion, garlic, pepper and smoked paprika, then cook until the vegetables begin to soften.
Add the rice and stir until every grain is coated. Mix the saffron into the hot stock and pour it into the pan.
Simmer gently for 20 to 25 minutes, without stirring too frequently, until the rice is tender and most of the liquid has been absorbed. Add the peas for the final five minutes.
Remove the pan from the heat and allow it to rest for five minutes. Finish with parsley and lemon wedges before serving.

Method

Add the butter, onion and mushrooms to the same pan. Cook over a medium heat for five to seven minutes, then add the garlic.
Stir in the rice and cook for two minutes. Add the hot stock one ladle at a time, stirring regularly and allowing each addition to absorb before adding more.
Continue cooking for approximately 20 to 25 minutes, until the rice is creamy but still has a slight bite.
Return the chicken to the pan. Stir in the Parmesan and thyme, check the seasoning and serve immediately.

Method
Heat the oil in a large pot. Add the onion and cook for five minutes before stirring in the garlic, ginger, curry powder and cumin.
Add the chicken and cook for five to seven minutes, stirring occasionally, until browned on all sides.
Add the peppers, coconut milk and stock. Bring everything to a gentle simmer and cook for 15 minutes.
Add the broccoli and continue cooking for another five to ten minutes, until the chicken is completely cooked and the vegetables are tender.

Method
Heat the oil in a heavy casserole pot. Brown the beef in batches, transferring each batch to a plate.
Cook the bacon, onions, carrots and mushrooms in the same pot. Add the garlic, flour and tomato purée, stirring for one minute.
Return the beef to the pot and gradually add the wine and stock. Add the thyme and bay leaves, then bring to a gentle simmer.
Cover and cook over a low heat for 2½ to three hours, stirring occasionally, until the beef is fork-tender and the sauce has thickened.
Alternatively, transfer the covered casserole to an oven preheated to approximately 160°C.

Method
Heat the oil in a large casserole pot and brown the lamb in batches.
Reduce the heat and add the onion and carrots. Cook for five minutes before stirring in the garlic, cumin, coriander, cinnamon and paprika.
Return the lamb to the pot and add the chickpeas, apricots, honey and stock.
Cover and simmer gently for two to 2½ hours, until the lamb is tender and the sauce has reduced.

- 2 tablespoons plain flour
- 1 teaspoon dried thyme
- 1 tablespoon oil
- Fresh parsley

Method
Season the beef and coat it lightly with flour. Heat the oil in a large casserole and brown the meat in batches.
Add the onions, carrots and garlic, cooking for five minutes. Stir in the tomato purée and thyme.
Gradually pour in the stout and beef stock, stirring to lift the caramelised pieces from the bottom of the pot.
Add the potatoes, cover and simmer over a low heat for 2½ to three hours. Stir occasionally and add a splash of water or stock if required.
The stew is ready when the beef is tender and the gravy is rich and thick. Finish with fresh parsley.

Method
Heat the oil in a large pot and cook the onion and peppers for five to seven minutes.
Add the garlic, chilli powder, cumin and smoked paprika. Stir for one minute before adding the tomato purée and chopped tomatoes.
Add the kidney beans, black beans, chickpeas and sweetcorn.
Simmer uncovered for 25 to 30 minutes, stirring occasionally, until the chilli is thick and rich.
